Instructions
In a large pot, heat olive oil over medium heat.
Add chopped onion and sauté until translucent, about 5 minutes.
Stir in garlic, carrots, and celery. Cook for another 5 minutes until they begin to soften.
Sprinkle in turmeric, ground ginger, and black pepper, sautéing for 2 more minutes.
Pour in chicken broth and bring to a gentle boil.
Add shredded chicken and reduce heat to low. Simmer for 10-15 minutes.
Season with salt to taste and garnish with fresh parsley before serving.
Notes
For a vegetarian version, substitute chicken with chickpeas or tofu and use vegetable broth. Add spinach or kale for extra nutrients.
