  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 large carrots, sliced
  • 2 stalks celery, sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground black pepper
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken
  • to taste salt

Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onion and sauté until translucent, about 5 minutes.
  • Stir in garlic, carrots, and celery. Cook for another 5 minutes until they begin to soften.
  • Sprinkle in turmeric, ground ginger, and black pepper, sautéing for 2 more minutes.
  • Pour in chicken broth and bring to a gentle boil.
  • Add shredded chicken and reduce heat to low. Simmer for 10-15 minutes.
  • Season with salt to taste and garnish with fresh parsley before serving.

Notes

For a vegetarian version, substitute chicken with chickpeas or tofu and use vegetable broth. Add spinach or kale for extra nutrients.
