Amaretto Cherry Jam

  • 3 1/2 cups pitted black cherries Use ripe, sweet cherries for best flavor.
  • 2 cups granulated sugar Essential for setting the jam.
  • 8 teaspoons lemon juice Freshly squeezed for best results.
  • 1 teaspoon vanilla extract or paste Adds depth of flavor.
  • 4 teaspoons Amaretto almond liqueur For that signature almond flavor.
  • 1 teaspoon butter Optional to reduce foaming.

Preparation

  • Rinse and pit 3 1/2 cups of fresh black cherries. Chop them roughly or leave them halved for a chunkier jam.

Cooking

  • In a large saucepan, add the cherries, sugar, and lemon juice. Stir gently to combine.
  • Using a potato masher or fork, lightly mash the cherries to release their juices.
  • Place the pan over medium heat and stir until the sugar dissolves and the mixture becomes juicy.
  • Bring the mixture to a gentle simmer, stirring frequently to prevent sticking or burning. Skim off any foam that forms with a spoon.
  • After about 15-20 minutes, once the mixture has thickened, stir in the vanilla and Amaretto liqueur. Let simmer for another 2-3 minutes.
  • To check if the jam is ready, place a small spoonful onto a chilled plate. If it leaves a clear line when you run your finger through it, it’s set. If not, simmer another 2-3 minutes and check again.
  • Pour the hot jam into sterilized jars, seal tightly, and let cool to room temperature before refrigerating.

Notes

Store the jam in sterilized, airtight jars in the refrigerator for up to 3 weeks. For longer storage, process jars in a water bath for shelf-stable storage up to a year.
