Ingredients

  • 4 large russet potatoes For the best texture.
  • 2 tablespoons olive oil For brushing the skins.

  • 1 cup shredded cheddar cheese For filling the skins.
  • 1/2 cup cooked bacon, crumbled For topping.
  • 1/4 cup green onions, chopped For garnish.
  • Sour cream For serving.

Instructions

  • Wash and thoroughly dry the potatoes.
  • Pierce them with a fork and microwave for 10 minutes or until they are soft enough to scoop.
  • Cut the potatoes in half lengthwise and let them cool.
  • Once cool, scoop out the flesh, leaving about 1/4 inch of potato on the skin.
  • Brush both sides of the potato skins with olive oil and season with salt and pepper.
  • Place the skins in the air fryer basket.
  • Cook in the air fryer at 400°F (200°C) for 10 minutes or until crispy and golden.
  • Remove the skins from the air fryer and sprinkle cheese and bacon into each.
  • Return to the air fryer and cook for an additional 2-3 minutes, or until the cheese is melted.
  • Garnish with green onions and serve with sour cream on the side.

Notes

For extra crispiness, brush a little more olive oil on the skins before air frying. Try experimenting with different cheeses for unique flavors!
