Air Fryer Cheesy Bacon Potato Skins

shredded cheddar cheese

cooked bacon, crumbled

Sour cream

Instructions
Wash and thoroughly dry the potatoes.
Pierce them with a fork and microwave for 10 minutes or until they are soft enough to scoop.
Cut the potatoes in half lengthwise and let them cool.
Once cool, scoop out the flesh, leaving about 1/4 inch of potato on the skin.
Brush both sides of the potato skins with olive oil and season with salt and pepper.
Place the skins in the air fryer basket.
Cook in the air fryer at 400°F (200°C) for 10 minutes or until crispy and golden.
Remove the skins from the air fryer and sprinkle cheese and bacon into each.
Return to the air fryer and cook for an additional 2-3 minutes, or until the cheese is melted.
Garnish with green onions and serve with sour cream on the side.
Notes
For extra crispiness, brush a little more olive oil on the skins before air frying. Try experimenting with different cheeses for unique flavors!
