Instructions
Ensure Filet Mignon is at room temperature and pat dry. Remove steaks from the refrigerator about 20–30 minutes before cooking so they cook evenly. Pat them dry with paper towels to help the crust form.
Season generously with salt, pepper, and optional seasonings. Rub each steak with 1 tablespoon olive oil, then sprinkle the salt, black pepper, and garlic powder on all sides. Add rosemary, thyme, or smoked paprika if using. Press the seasonings gently into the meat.
Preheat the Air Fryer to 400°F for 5 minutes. Preheating is important to get immediate searing action and to form a good crust.
Cook the Filet Mignon in the Air Fryer based on desired doneness: 10–12 minutes for medium-rare, flipping halfway. Place steaks in a single layer in the basket without overcrowding.
Rest the steak for 5 minutes before slicing and serving. Transfer steaks to a plate, tent loosely with foil, and let rest — this keeps the juices inside. If desired, top with a pat of butter and a drizzle of Worcestershire sauce immediately before serving.
