Instructions
Preheat your oven to 180°C (350°F). Grease and line a 20cm (8-inch) cake tin or loaf pan.
In a large, microwave-safe bowl, melt the butter. Stir in the soft brown sugar until smooth and glossy.
Mix in the mixed dried fruit, orange zest, orange juice, cinnamon, and mixed spice.
Add the beaten eggs and sift in the self-raising flour (or flour plus baking powder). Mix well until no dry patches remain.
For extra flavor and richness, stir in 2–3 tablespoons of brandy, rum, or sherry (totally optional).
Pour the batter into the prepared tin. Smooth the top and bake for 40–45 minutes, or until golden and a skewer comes out clean.
Let the cake cool in the tin for 10 minutes before turning out. Slice, serve, and enjoy—warm or at room temperature.
Notes
Store airtight at room temperature for up to 3 days. For longer storage, refrigerate for up to one week or freeze for up to 2 months.
