  • 1 cup Unsalted Butter Melted
  • 1 cup Soft Brown Sugar
  • 1.5 cups Mixed Dried Fruit (raisins, currants, sultanas)
  • 1 unit Orange Zest From 1 orange
  • 1 unit Orange Juice From 1 orange
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Mixed Spice Or ½ teaspoon each nutmeg and allspice
  • 2 large Eggs Beaten
  • 1.75 cups Self-Raising Flour Or all-purpose flour plus 2 teaspoons baking powder
  • 2-3 tablespoons Brandy, Rum, or Sherry Optional

Instructions

  • Preheat your oven to 180°C (350°F). Grease and line a 20cm (8-inch) cake tin or loaf pan.
  • In a large, microwave-safe bowl, melt the butter. Stir in the soft brown sugar until smooth and glossy.
  • Mix in the mixed dried fruit, orange zest, orange juice, cinnamon, and mixed spice.
  • Add the beaten eggs and sift in the self-raising flour (or flour plus baking powder). Mix well until no dry patches remain.
  • For extra flavor and richness, stir in 2–3 tablespoons of brandy, rum, or sherry (totally optional).
  • Pour the batter into the prepared tin. Smooth the top and bake for 40–45 minutes, or until golden and a skewer comes out clean.
  • Let the cake cool in the tin for 10 minutes before turning out. Slice, serve, and enjoy—warm or at room temperature.

Notes

Store airtight at room temperature for up to 3 days. For longer storage, refrigerate for up to one week or freeze for up to 2 months.
