  • 1 box yellow or white cake mix
  • 1 cup unsalted butter, melted
  • 2.5 cups rhubarb, chopped

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large bowl, mix the cake mix and melted butter until a thick dough forms.
  • Press 2/3 of the mixture into the bottom of the prepared dish.
  • Evenly sprinkle chopped rhubarb over the base layer.
  • Crumble the remaining cake mix over the rhubarb.
  • Bake for 30–35 minutes or until golden brown and set.
  • Let cool before slicing into squares and serving.

Notes
