  • 1 lb Ground beef Fresh, no need to thaw
  • 2 cups Egg noodles Cooked according to package instructions and drained
  • 1 Bell pepper Diced (any color), seeds removed
  • 1 Onion Chopped (medium)
  • 1 cup Tomato sauce Room temperature or from the can
  • Salt To taste
  • Pepper To taste
  • 2 tablespoons Fresh parsley Chopped, optional for garnish
  • 1/2 cup Cheddar or Parmesan cheese Grated, optional for serving

Instructions

  • Heat a large skillet over medium-high heat. Add the ground beef. Break it up with a spatula and cook, stirring occasionally, until browned and no pink remains, about 4 to 5 minutes. Drain excess fat.
  • Reduce heat to medium. Add the chopped onion and diced bell pepper to the skillet with the beef. Sauté until the vegetables are softened and the onion is translucent, about 3 to 4 minutes.
  • Stir in the cooked egg noodles and pour in the tomato sauce. Gently toss to combine so the sauce coats the noodles and meat evenly. Taste and season with salt and pepper. Cook for another 2 to 3 minutes until everything is heated through.
  • Remove from heat. Serve hot straight from the skillet, garnished with chopped parsley or a sprinkle of grated cheese if desired.

Notes

Store leftovers in an airtight container for up to 3 to 4 days. Can freeze for up to 2 months.
