2cupsEgg noodlesCooked according to package instructions and drained
1Bell pepperDiced (any color), seeds removed
1OnionChopped (medium)
1cupTomato sauceRoom temperature or from the can
SaltTo taste
PepperTo taste
2tablespoonsFresh parsleyChopped, optional for garnish
1/2cupCheddar or Parmesan cheeseGrated, optional for serving
Instructions
Heat a large skillet over medium-high heat. Add the ground beef. Break it up with a spatula and cook, stirring occasionally, until browned and no pink remains, about 4 to 5 minutes. Drain excess fat.
Reduce heat to medium. Add the chopped onion and diced bell pepper to the skillet with the beef. Sauté until the vegetables are softened and the onion is translucent, about 3 to 4 minutes.
Stir in the cooked egg noodles and pour in the tomato sauce. Gently toss to combine so the sauce coats the noodles and meat evenly. Taste and season with salt and pepper. Cook for another 2 to 3 minutes until everything is heated through.
Remove from heat. Serve hot straight from the skillet, garnished with chopped parsley or a sprinkle of grated cheese if desired.
