    • Preheat your oven to 500ºF (260ºC). Grease a baking pan or a skillet lightly with lard or butter.
  2. Mix the Dough:
    • Place about 4 cups of flour in a sifter and sift into a large, wide bowl. Create a well in the center with your hand.
    • Add the lard and buttermilk into the well. Start squishing them together with your fingers, breaking the lard into small clumps.
    • Begin stirring with your fingers in small circles at the center, gradually incorporating the flour from the sides of the bowl. Continue until most of the flour is worked in, but the dough is still slightly sticky.
  3. Shape the Biscuits:
    • Lightly flour your hands and the dough. Gently knead the dough a few times until it’s fairly smooth, then shape it into a rectangle.
    • Pinch off sections of dough slightly larger than a golf ball. Roll each piece in your palms to smooth it, then lightly coat with flour.
    • Flatten each piece like a hamburger patty and place on the prepared pan. Arrange the biscuits so they are touching for softer edges or spaced one inch apart for crispier edges.
  4. Bake:
    • Gently press down the top of each biscuit with the back of your fingers. Bake in the preheated oven for 8-12 minutes, or until the biscuits are lightly browned on top. Optionally, brush the tops with melted butter for extra flavor and golden color.
  5. Enjoy:
    • Serve warm, fresh from the oven, with butter, honey, jam, or your favorite gravy!
