Olive oil for sautéing
Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent (about 5 minutes).
Stir in minced garlic and cook for 1 more minute.
Pour in the white beans and broth, stirring to combine.
Stir in fresh spinach and cook until wilted.
Reduce heat and add heavy cream and Parmesan cheese. Stir until fully combined and creamy.
Add salt and pepper to taste. Adjust seasonings as needed.
Ladle into bowls, garnish with extra Parmesan, and enjoy warm!
Notes
Use freshly grated Parmesan for better melting. Avoid overheating the cream to prevent curdling.
