  • 1 cup White beans (canned or cooked)
  • 2 cups Fresh spinach
  • 1 cup Heavy cream
  • 1 cup Chicken or vegetable broth
  • 1 cup Grated Parmesan cheese
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • to taste Salt
  • to taste Pepper
  • as needed Olive oil for sautéing

Instructions

  • Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent (about 5 minutes).
  • Stir in minced garlic and cook for 1 more minute.
  • Pour in the white beans and broth, stirring to combine.
  • Stir in fresh spinach and cook until wilted.
  • Reduce heat and add heavy cream and Parmesan cheese. Stir until fully combined and creamy.
  • Add salt and pepper to taste. Adjust seasonings as needed.
  • Ladle into bowls, garnish with extra Parmesan, and enjoy warm!

Notes

Use freshly grated Parmesan for better melting. Avoid overheating the cream to prevent curdling.
