This Southern Chocolate Cobbler is a warm, gooey, and incredibly decadent dessert that combines the richness of a brownie with the warmth of a pudding. It’s a self-saucing chocolate treat, perfect when paired with vanilla ice cream.


Ingredients:

For the Batter:

  • 1/2 cup unsalted butter
  • 1 1/2 cups granulated sugar
  • 4 tablespoons unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 teaspoons vanilla extract

For the Topping:

  • 2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 3 cups boiling water
  • Vanilla ice cream, for serving (optional, but highly recommended)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Melt the Butter:

  • Place 1/2 cup of unsalted butter in a 9×13-inch baking dish. Put the dish in the preheated oven to melt the butter.
  • Once melted, remove the dish from the oven and set aside.

3. Prepare the Batter:

  • In a medium bowl, stir together the 1 1/2 cups sugar, 4 tablespoons unsweetened cocoa powder, 2 cups all-purpose flour, 2 teaspoons baking powder, 1/4 teaspoon salt, 1 cup milk, and 2 teaspoons vanilla extract until smooth.
  • Spoon the batter into the baking dish over the melted butter. Do not stir the butter into the batter; leave it as is.

4. Prepare the Topping:

  • In a separate bowl, mix together the 2 cups sugar and 1/2 cup unsweetened cocoa powder.
  • Sprinkle this mixture evenly over the batter in the baking dish.

5. Add Boiling Water:

  • Carefully pour 3 cups of boiling water over the top of the cocoa-sugar mixture. Do not stir.

6. Bake:

  • Place the dish in the oven and bake for 35-40 minutes, or until the top has set. The bottom will remain loose and gooey, creating a rich chocolate sauce underneath the cobbler crust.

7. Let Cool and Serve:

  • Allow the cobbler to cool for about 15 minutes before serving.
  • Serve warm, and for an extra indulgent treat, top each serving with a scoop of vanilla ice cream.

  • Do not stir the layers: The magic of this recipe comes from the layering and the self-saucing process, so resist the urge to stir.
  • Add-ins: For extra texture, you can mix in chopped nuts, such as pecans or walnuts, to the batter.
