Easy Banana Nut Bread
This Banana Nut Bread is a delicious, moist, and easy-to-make treat perfect for breakfast or a snack. The recipe makes two loaves, so you’ll have one to share or freeze for later!
Ingredients:
- 2 cups all-purpose flour
- 1½ tsp baking soda
- Pinch of salt
- 1 cup granulated sugar
- ½ cup vegetable oil
- ½ tsp cinnamon (optional)
- 2 large eggs
- 1 tsp vanilla extract
- 4 medium ripe bananas, mashed (about 1⅓ cups)
- 1 cup coarsely chopped walnuts
Directions:
- Preheat and Prep:
- Preheat your oven to 350°F (175°C).
- Grease two 8×4-inch loaf pans and set aside.
- Dry Ingredients:
- In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside.
- Wet Ingredients:
- In a large mixing bowl, whisk together the sugar, oil, eggs, cinnamon (if using), and vanilla extract until well combined.
- Add the mashed bananas and stir gently to mix.
- Combine and Fold:
- Gradually add the dry flour mixture into the wet banana mixture, stirring until completely combined.
- Using a rubber spatula, fold in the chopped walnuts.
- Bake:
- Divide the batter evenly between the two greased loaf pans.
- Bake for 35 to 45 minutes, or until a thin knife inserted into the center comes out clean. (Tip: If the loaves start to brown too quickly before baking through, cover them loosely with foil.)
- Cool:
- Let the loaves cool in the pans for 10 minutes before turning them out onto a wire rack to cool completely.
