Instructions

  • Start by placing the diced potatoes, chopped onion, minced garlic, chicken broth, and water into your crock pot.
  • Cook on low for 7-8 hours or on high for about 4 hours until the potatoes are tender.
  • About 30 minutes before you’re ready to serve, melt the butter in a saucepan.
  • Whisk in the flour and cook for 1-2 minutes until it’s golden.
  • Gradually add the heavy cream while whisking until smooth.
  • Pour this creamy mixture into the crock pot.
  • Stir in the sour cream, cheddar cheese, bacon bits, salt, pepper, and paprika.
  • Cover and cook on high for another 30 minutes, until the soup is thick and creamy.
  • Serve hot, garnished with chopped green onions.
